Fun Lunch Friday: Sandwich bread sushi

This fun lunch is super easy and quick and if your kids like California rolls like mine then they will love this.
Ingredients: 
Sliced bread
Avocado
Surimi imitation crab
Cream cheese
Cucumber
Cut the edges off of the bread slices. 
Take the cream cheese (if you make kefir spread it works good too) and spread it on the bread, not too little but not too thick.  Slice avocado, cucumber and surimi into long strips. Lay them on one side of the bread.
Roll bread up starting on the side that your veggies and crab are.
Slice into rounds.  Serve with soy sauce (fermented is better for you).

    I am sooooo excited about this simple recipe. I like sushi – but the few times I've had my little ones try it didn't go over so very well. This will be fun, nutritious, and easy for my 3 and 4.5 year old to help assemble.
