The rhythm of our week. Monday: Baking day

Work is love made visible

I am feeling under the weather..
We are out of yogurt and bread.
We are always out of yogurt and bread by Sunday.
Into the kitchen I go.

I will be posting, God willing, my rhythm for each day this week.  For an explanation on rhythm click here

I only made yogurt and bread today, I reflected on the women in the prairie who did this wether they wanted to or not because they had to feed their families.  I am sure on a regular day they were more tired than my sicky, tired self is feeling today.  With that in mind, I pulled out the grain mill and my supplies and made our favorite bread.

Thick and filling Oatmeal honey wheat bread
(makes two loaves)

2 c water

1/2 c honey

1/3 c butter

6 cups whole wheat flour

1 c qiuck cook oats

2 tsp sea salt

4 1/2 tsp dry active yeast

5 tbsp olive oil

Heat the water, honey and butter until they reach about 120 degrees.

In a large bowl, mix the oats, salt, yeast and 5 cups of the flour

add the honey mixture and mix on low for a minute

 if the dough is sticky, add the remaining cup of flour little by little until the dough clears the side of the bowl while being mixed. It is now time to knead the bread dough.  You can knead it by hand (its supposed to be therapeutic) but I use my dough hook and turn the mixer on speed 3 or 4 for about 2 minutes.

 I then take it out of the bowl for a second, grease the bowl and pop it back in.  Cover it with a damp kitchen towel and let rise until double (this will take about 1 hour). During this time I am making yogurt or something else that needs to be done during my baking break.

 Punch it down, divide it into two pieces and rolleach out into a rectangle, then roll it up jelly roll style and put into greased bread pans.

 Let it rise until double and then bake it at 375 for 20-25 minutes. This bread is so good, it is by no means empty calories.  I eat two slices with jam or nut butter and I am good for a long time.

Monday kneads the water and flour, bowls of dough hour by hour

Tuesday pulls the needle and thread, to sew the blankets for the bed

Wednesdays linens washed and sunned, till all the clothes are clean and done

Thursday stop to search and look until you find the perfect book

Friday works the soil by hand, to weed and plant the good Lord’s land

Saturday time to plan ahead and gather the grains to bake the bread

Sunday comes to give us rest, Thank the Lord for our little nest.

    The ingredients list says to use 5 tbsp. olive oil but I didn't see where to use that with the instructions. Is that what you used to grease the dough and bowl?

      So sorry about that, yes I use it to grease the bowls and then it just gets integrated into the bread.

    Let's see. 2 cups of oatmealplace in a glass bowl, with a pinch of salt and enough water to just cover the oatmeal. Leave overnight.In the morning place in saucepan with enough water to cover. You might only have to add a cup of water. bring to a boil, reduce to simmer and cook until desired consistency. until desired consistency. (I'd say 2 minutes)Add about 2 tablespoons of honey. Two pats of butter. Stir. Ladle into bowls and pour a bit of cream on top (I'd say 1 tablespoon or more if you like a more soupy mixture).

    I soak a cup of old fashioned oats in water and a pinch of salt overnight. IN the morning I make the porridge like oatmeal. I add a pat of butter, some honey, dash of salt and once ladled in a bowl a dallop of cream.

    Josette, I am so happy that you like it. I played around for a while until I got it just the way I wanted it. Though every once in a while I will decide to try a new recipe and I am always sorry and go back to my own recipe. Hmmm porridge huh? Share how you make porridge please?

    I just had to stop in and tell you I have used your bread recipe several times and it's now my new favorite. I have used the old fashioned oats and even leftover porridge (worked just fine!) Today I made hamburger buns with the recipe!

    rogerandkatie, I actually wash everyday otherwise my laundry shoot would reach the top floor of our house by day 3 : ) Wash day is the day when I get all the laundry done and leave the laundry room clean and empty. All bed sheets are washed and hung, and the focus is on laundry as where on the other days I will do a load or two a day. Diapers are washed on wash day and hung to get sanitzed by the sun. I have enough diapers to diaper a few babies so I can do it once a week. If it rains then I use the dryer just like when it is freezing outside, I spare myself from going out there. I love seeing clothes on the line! I do have a specific day for cleaning. On Saturdays we get everything clean so we can rest on Sunday. The kids get the job going while Poppa and I go to the market and then when we get back Poppa and I tackle the hard stuff plus the farm chores. When I have a new baby, I get very little done so don't worry, life is all about seasons and your season right now has been to enjoy your baby.

    I used to have a rhythm. It went out the window when I was on bedrest with my daughter. She came a little too early, and having a preemie took all of my time/energy. She is now almost one! and I think its time to institute another rhythm. I never feel truly relaxed unless I have a set day to get all of the cleaning done. What do you do when it rains on Wash Day? Do you wash anyway, or do throw all of your clothes in to the dryer? Do you have a day set aside to clean, or do you do little bits every day?
